Alice Engelbrink Houston spent many hours in the kitchen perfecting her tomato pie recipe. It has been a family favorite for years and was a requirement at every family gathering! The mix of savory spices and sweet tomatoes make it appealing to children and adults alike. While in a pinch, she would use store bought pie crusts, making her own was her preference. Here are some different recipes for pie crusts that she experimented with.

 

Tomato Pie

She used the Buttery Flaky Pie Crust recipe from of AllRecipes.com

Alice Engelbrink Houston Killer Chili

In the winter, chili was her go-to meal to warm up on cold nights.  Here is her delicious recipe for chile: 

In one large pot, mix the following 

1 chopped onion 

1 chopped red pepper 

1 chopped zucchini 

1 chopped carrot 

1 can of diced tomatoes 

1 pound of ground beef 

2 garlic cloves minced 

Saute the following then add two cans of vegetable broth bring to a boil and let simmer for 20 minutes.  Serve with shredded cheddar cheese, sour cream, and sliced green onions for garnish.  Yum!
